Spiee Cake.—Beat slightly the yolks of two eggs and one whole egg and add three-fourths of a cupful each of sugar and of sour milk. Put in the flour sifter two cupfuls of flour, one teaspoonful each of ground cloves, cinnamon and mace, and half a teaspoonful of salt. Sift into the liquid, stir, and heat until well mixed. Then add half a teaspoonful of hot water. Bake in three layers in a hot oven for 15 minutes. For the filling beat whites of eggs to a stiff froth. Pour over them slowly half a cupful of hot maple syrup and beat until thick and cool. Spread between layers and on top. Gingerbread.—Beat together two eggs, one cupful of molasses, and half a cupful of sugar. Add a tablespoonful of ginger and a dessert spoonful of oinnamon. Add half a cupful of sour milk and two cupfuls of sifted flour. Dissolve a teaspoonful of soda in one-fourth of a cupful of sour milk, add, mix, and pour into a shallow buttered pan. Bake in a moderate oven for half an hour. German Crisps. $ \rightarrow $ Beat two eggs with two cupfuls of sugar and add half a cupful of sour milk in which half a teaspoonful of soda has been dissolved. Sift in sufficient flour to make a soft dough. Knead lightly, roll out half an inch in thickness, and cut in fancy shapes. Sprinkle with coarse sugar and nut meats, or press a whole almond in the center. Drop Cookies.—Mix two cupfuls of sugar with two eggs, add one cupful of molasses and half a cupful of sour milk. Add one cupful of raisins or currants (if raisins are used cut them amalf), one teaspoonful each of eloves and oinnamon, half a teaspoonful of soda dissolved in a tablespoonful of hot water, and six cupfuls of flour. Mix all together well and drop from a spoon on a buttered tin, having the cakes some distance apart. Sugar and bake in a slow oven for 15 minutes. LEMONS AS CUPS FOR SALADS. Add Attractiveness to Table at Lucheon or Dinner. Lemons are so useful as cups for salads that we wonder what would happen if the lemon trees would quit bearing. Choose big plump lemons, scoop them well and scrub the outsides. You may not believe it, but some cooks do forget to do this simple hygienic thing. Therefore pick your lemons, wash, then cut in halves and scoop out the pulp. Remove the tough inner skin and seeds and to the rest add one box of best boneless sardines minced fine, a spoonful of French mustard, two hard-boiled eggs, chopped, a dash of Tabasco sauce and a little mayonnaise. Cut a thin slice from the bottom of the lemon cup in order that it may stand firmly. Fill each cup with the mixture; garnish with chopped eggs and a sprig of parsley, and if possible set in a nest of nice crisp watercress unless it is a time for curly lettuce. The very curly endive makes a charming setting to salad cups and does not wilt very soon. On baking day take from your dough after its second rising two cups risen dough. Have ready also two cups white sugar, one cup butter creamed with sugar, three eggs, one even teaspoon soda dissolved in hot water, two tablespoons sweet milk—cream is better — one-half pound currants washed and dredged, one teaspoon nutmeg, one teaspoon cloves. Beat the yolks very light, add the creamed butter and sugar, the spice, milk, soda and dough; stir until all are well mixed; put in the beaten whites, lastly the fruit. Beat hard five minutes; let it rise 20 minutes in two well buttered pans, and bake half an hour, or until done. Cake Worth Trying. Place your sifter in your mixing bowl, in your sifter put one cup of sugar, 1 1/2 cups of sifted flour, one level teaspoon of soda and two level teaspoons of cream of tartar. Sift these all together into your bowl. Put into a teacup the whites of two eggs, add enough melted butter to half fill the cup and on that put enough milk (sweet) to fill the cup. Put in your mixing bowl with the other ingredients, add flavoring and beat five minutes. So easily and quickly made, and when baked will be light as a feather. Another loaf can be made from the yolks in the same way. Fish Pudding. Boil two pounds of any kind of white fish, remove all the skin and bones, then chop it up finely; put it into a basin, add half a cup bread crumbs, one teaspoonful chopped parsley, a little salt, pepper and nutmeg. Add one teaspoonful of flour, one cupful of milk, one tablespoonful melted butter and two well-beaten eggs. Pour the mixture into a well-buttered mold, cover with buttered paper and steam gently one hour. Turn out carefully, decorate with thinly sliced lemon. Serve hot with oyster sauce. We shall never know whether that University of Michigan professor is right or wrong who says that Timbucoo will be the capital of the world in 4.000 A. D. Bread Cake. JAMES M. KERR DEAD National Committeeman Dies Suddenly After Operation NEW YORK: James Kerr, democratic national committeeman from Pennsylvania, died at 1:40 o'clock Saturday morning at his summer home in New Rochelle, following an operation for an intestinal disorder which had made him practically an invalid for a year. His wife and sons were with him at the end. Mr. Kerr was born in Mafflin county. Pa., in 1851. He received his education in the Pennsylvania schools and removed to Clearfield, Pa., when a young man. He took an active part in politics on the side of the democratic party, with which he has always been identified and was elected to the fifty-first congress in 1888. Mr. Kerr was democratic state chairman during the Pattison-Delamater gubernatorial campaign in Pennsylvania, one of the rare occasions on which this state went democratic. It was at this time he was made a member of the democratic national committee. ENOUGH EVIDENCE TO HANG Proof in Plenty to Convict Ringleaders of Night Riders Camp Nemo, Reelfoot Lake, Tenn.: "We know who fired the shots and who put the rope around Rankin's neck," said Governor Patterson in a statement here just before his departure for Union City, where a special grand jury is investigating the night rider depredations in this section which culminated recently in the murder of Captain Quentin Rankin. The governor in his statement said : "The proof which has thus far developed is positive as to the guilt of some of the men under arrest and implicates many others. This will all be presented to the court at the proper time and a long step has been taken to discover and suppress lawlessness in this region. We know who fired the shot and who put the rope around Rankin's neck. The number of men actually at the killing was probably not more than ten, while some stood guard and others held the horses. "The whole number engaged in the undertaking did not exceed thirty-five. The inquiry will further be prosecuted and the state will have ample evidence to convict." The confessions of Ferriner, Hogg and Morris substantiate, it is said, that of Ted Burton, made the other day. These three will be used as state's witnesses. They will be taken to Memphis for safe keeping. It is understood that Garrett Johnson, alleged captain of the night riders, and others, will be taken to Nashville, Part of Acronautical Show NEW YORK: The weather bureau at Washington has decided to take part in the aeronautical show to be held in New York on election day under the auspices of the American Aeronautic society with an exhibit of various sorts of apparatus by which meteorological observations are taken. Among these will be the great box kites sent up to high altitudes and sounding balloons with instruments attached which register various conditions miles in the air. Waters-Pierce Argument Begun WASHINGTON: Argument was begun in the supreme court of the United States in the Waters-Pierce oil company case in which that company seeks to have reversed the decisions of the state courts of Texas ousting it from doing business in the state and imposing a fine which, counting both principal and interest now amounts to about $1,750,000. Motor Explodes in Midair LEMANS, France: While Wilbur Wright, the American aeroplanist, was making a flight the motor of the machine exploded. Time's Wonderful Changes. Harry Lauder says that when Sir Alexander Ramsay was constructing upon his magnificent estate in Scotland a piece of machinery to drive, by means of a small stream in his barnyard, a threshing machine, a winnowing machine, a circular saw for splitting trees, a hay press, an oat roller, etc., he noticed an old fellow, who had long been about the place, looking very attentively at all that was going on. Unusually Severe Drought. The water in Lake Champlain during the recent drought reached the lowest point recorded in local history, nine feet below high water mark. Steamers were obliged to abandon many of their trips on account of the impossibility of making landings at the docks. Verdict of Denver Expert May Start Rush of Miners. Oklahoma City, Ok.—John Fisher, an old miner, left for the Denver assaying office with a sack of gold ore found in the hills near Ravia, Ok., and upon the showing will depend the activity of mining operations at that place, where considerable excitement has been caused from the finding of what is believed to be good ore. The best ore was found on Mill creek. This was some months ago and some of the ore assaved $6 per ton. The country near Ravia is being overrun with prospectors and many claims have been staked, but not worked, pending the outcome of the ore sent to Denver. COTTON GINS UNDER GUARD. Night Riderism at Konawa, Ok., Is Resisted by Armed Men. Oklahoma City, Ok.—Cotton gins are being operated under heavy guard at Konowa, the center of night riderism in Oklahoma, and those temporarily suspended, pending attempt to secure guards, will be opened in a few days. A number of threatening letters have been received by business men and cotton buyers there in the last few days, but the gins will pay not attention to them and will continue taking cotton. Guthue, Ok.—The Bank of Parton, originally chartered as the Bank of Harrison, has amended its charter so is to make its place or business at Parton in Tillman county, on the line of the Washita Falls & Northwestern railroad. Its capital stock is $10,000 and the incorporators are O. T. Hayward of Elk City, J. E. Harmon, L. W. Hayward and Walter W. Hayward of Manitou. Other charters were: Enid Fair and Live Stock Association of Enid; capital stock, $50,000; incorporators, W. D. Frantz, C. V. Porter, Harry Louthan, George J. Emerick and W. H. Hills. Guthrie, Okla.—In an opinion to County Clerk Kerr of Pontotoc county Attorney General West determines the basis of settling disputes arising from conflicting tax assessed valuations. "The valuation as assessed by the state board and certified to the county boards by the state auditor," says the opinion. "is the official and only authorized valuation of property for taxation purposes. This valuation when certified succeeds and annuls any and all previous valuations for tax purposes. The county commissioners have authority only to extend valuations as levied by school districts. Expect to Invite Two Thousand Oklahoma City, Ok.—What probably will be the largest secret society convention ever held in Oklahoma will be that of the Woodmen of the World Dec. 3, when it is expected that 2,000 members will be initiated. Arrangements are now being made to take care of 5,000 delegates. Sovereign Commander Root of Omaha will be present and also a number of leading officers from all over the country. Oil Inspection Fees. Guthrie, Okla.—T. D. Kelly, state oil inspector, has filed his report for September, showing 10,184 barrels of coal oil and 6,358 barrels of gasoline inspected during that month. He reports total inspection fees received at $1,654.80, of which $407 was retained by deputies as salaries and $1,274.80 turned into the state treasury. HE HELPED FOUND ARDMORE. Ardmore, Ok.—Alva Roff, 65 years old, a wealthy ranch owner, was instantly killed in a runaway northwest of this city Saturday. Roff was one of the foraders of a fire. To the Editor — Sir:—Doubtless many of your readers will be pleased to have some word from the grain fields of Western Canada, where such a large number of Americans have made their home during the past few years. It is pleasing to be able to report that generally the wheat yield has been good; it will average about 20 bushels to the acre. There will be many cases where the yield will go 35 bushels to the acre, and others where 50 bushels to the acre has been recorded. The oat and barley crop has been splendid. The prices of all grains will bring to the farmers a magnificent return for their labors. An instance has been brought to my notice of a farmer in the Pincher Creek (Southern Alberta) district—where winter wheat is grown—who made a net profit of $19.55 per acre, or little less than the selling price of his land. 30, 40, and 50 bushel yields are recorded there. The beauty about the lands in Western Canada is that they are so well adapted to grain-raising, while the luxuriant grasses that grow everywhere in abundance make the best possible feed for fattening cattle or for those used for dairying purposes. The new homestead regulations which went into force September, 1908, attracted thousands of new settlers. It is now possible to secure 100 acres in addition to the 160 acres as a free grant, by paying $3.00 an acre for it. Particulars as to how to do this and as to the railway rates can be secured from the Canadian Government Agents. "The development throughout Western Canada during the next ten years will probably exceed that of any other country in the world's history," is not the statement of an optimistic Canadian from the banks of the Saskatchewan, but of Mr. Leslie M. Shaw of New York, ex-Secretary of the United States Treasury under the late President McKinley and President Roosevelt, and considered one of the ablest financiers of the United States. "Our railway companies sold a good deal of their land at from three to five dollars an acre, and now the owners are selling the same land at from fifty to seventy-five dollars, and buying more up in Canada at from ten to fifteen." The editor of the Monticello (lowa) Express made a trip through Western Canada last August, and was greatly impressed. He says: "One cannot cross Western Canada to the mountains without being impressed with its immensity of territory and its future prospects. Where I expected to find frontier villages there were substantially built cities and towns with every modern convenience. It was formerly supposed that the climate was too severe for it to be thought of as an agricultural country, but its wheatraising possibilities have been amply tested. We drew from Ontario many of our best farmers and most progressive citizens. Now the Americans are emigrating in greater numbers to Western Canada. Seventy-five per cent. of the settlers in that good country located southeast of Moose Jaw and Regina are Americans. Canada is well pleased with them and is ready to welcome thousands more." Colombia's One Iron Foundry. The only iron foundry in Colombia, South America, is at Bogota. It is known as La Paradera and is operated on a small scale, native ores being smelted, the iron being subsequently remelted for casting purposes. There are several commercial iron deposits in the interior of the country, and one ore body situated near the coast of the Caribbean sea is now being drilled by American engineers. Muskogee Cimeter. MUSKOGEE. The sultanay of Morocco, in northwestern Africa, has a larger area than France or Germany, but its affairs attracted little attention in America until it was announced, about two years ago, that his elder brother, Mulai-Hafid, was attempting to depose Mulai-Abd-el-Aziz, who acceded in 1894. Students settled themselves to watch an interesting contest between the sultan and his would-be successor; but it speedily degenerated into a squabble, and nothing important developed until recently, it appeared that the pretender had become a pawn in the game of international finance. Very early in the game Mulai-Hafid captured Fez the northern capitak Mulai-Abd-el retain control of the southern capitak Morocco. Each spat defiance at the other, but neither could crush the other, for want of men and arms. It was a deadlock which there might be profit in breaking; and the son of a former member of the British parliament organized a syndicate of capitalists, made his way in disguise to Fez—he was the first European to enter the city in a year—and put himself in touch with Mulai-Hafid. The syndicate pledged itself to place that gentleman on the throne, asking, in return, concessions for the building of railways and opening of mines, the reorganization of the finances, various important political posts, and a partial control of the customs. Mulai-Hafid seems to have hesitated, for German, Portuguese and American financiers now flocked into the field, all anxious to promote his cause for a consideration. But although these others wanted less, they likewise promised less,—an American corporation, for instance, offered a paltry million dollars for the right to build a railway through a rich mining country, mineral rights to be "thrown in,"—and at last accounts the pretender had accepted the British proposition, and six Englishmen were busy at Fez, organizing victory. Such is, in brief, the story told by the adventurous Englishman and by journalists who have no particular bias. Revolutions nearer home are seldom financed "for love" or "for fun," and there is reason to believe that certain South American rulers who showed conspicuous kindness to foreign "interests" were only paying for the help that made them rulers. No doubt, remarks the Youths' Companion, the Englishmen will earn all they get. --- How many Americans enunciate distinctly the name of the town in which they live—or of any other town? The heroine of a recent linguistic accident had the excuse, at least, of being strange to the English language. She was German, and lived in Pittsburg, Pa. She wished to go to Norwalk, O. The agent gave her a ticket to Norfolk, Va., and she was taken there. She returned to Pittsburg and tried again. This times he got a ticket to Newark, N. J., and had to go back home again. With her money gone and no friends, she would have had a hard time but for the kindness of a German painter. When she finally reached Norwalk, she had spent $60 in railway tickets, when but for indistinct enunciation she would have had to spend only seven dollars.
